Seeing a definite increase in referrals from searches made in the singular, i.e. "blue widget" as opposed to "blue widgets".
Anyone else seeing this and if so any ideas why?

No, there is a marked move away from the old style "lower case and plural".

NFFC question. Wouldn't the surfer still find you as widgets if your keyword was widget? I am guessing that it would have a lower ranking though?

if you ONLY targeted the singular form of the keyword.. then you will be ranked lower on the plural or -sometimes- not be ranked well at all for the plural keyword search.
