I have some doubts regarding foreign characters in German or Spanish pages.

For example, the German word for breakfast is

Frühstück

Having a look at the code in the page, that word is written:

Frühstück

In Spanish for example

Diseño
diseño

I would prefer to comply with the UTF-8 standard

Do the search engine see that words in the same way?

Have you declared the language in the page? Do your headers show the proper character set? If you have that set up correctly then the SE robots should see the intended format.
