GoogleGuy mentioned that SARS was a good indication that there were a lot of new pages in the updated data centers. So I just did a search for SARS on the 9 data centers. Here is the result:
559,000 in
579,000 ex
2,720,000 sj
3,040,000 fi
3,050,000 va
3,070,000 dc
3,070,000 ab
3,070,000 zu
3,070,000 cw
SJ and FI were the first to show the new results so it's reasonably safe to say that they have older data.
However, surely more pages=less filters/more spam which might indicate older results? Strange that va has less results as it was updated after cw and dc.
'googledigook' sounds like a word that could come in very handy ;)

The higher the number, the more pages are indexed containing the word (or having it as anchor) SARS.
So it looks the data centers dc, ab, zu & cw have the most fresh data. But as you can read at the start of my previous message, it depends on what you call 'up to date'.

If you search for backward links, order of 'up to date' data centers could be different. Looking for a recent added category in the Google Directory (SARS [directory.google.com]) gives:

I'm not sure what this means either :)
AFAIK in and ex have yet to be updated.
