Is site map linking all pages with a link to the site map on each page still a viable way to get Google to crawl your site or should you interlink pages in a hierarchical manner eventually linking all pages?

Traditional site map pages will do fine. Keep them below the 101 kb size, thats the indexing limit for Google.

Keep in mind that a page without a link towards it will not get indexed and that linking is like spreading the wealth of your site. More important pages probably should get more internal links towards it.
