What does it mean when Google spiders a whole bunch of your pages and they just appear as the URL in the blue-link title of the SERP and no description. What does it mean if this is going on for months? Some pages are dynamic, could it be it gave up on spidering descriptions that will change?

It just means that Googlebot hasn't crawled that URL. This tends to happen when the PageRank has run out deep into a site, especially with dynamic looking URLs that require more PR to be spidered.

Happened to me when googlebot heavily crawl my site and the site was down.

It can also happen if they are investigating a SPAM report on your site - I've seen pages I've reported maintain their standing in the SERPs, but lose descriptions, for some of the nastier SPAM methods. Hope you're clean! ;)
