moving site and duplication

I know this has been discussed a million times, but the "conventional wisdom" answer concerns me a lot.

I've moved my site to a new server/IP address, but kept the old version of the site because I read on here that googlebot caches IP address. It's clearly true, because Googlebot is still visiting the old site almost daily, though I saw a visit to the new IP one day.

My worry is that google is seeing these two almost-identical sites and is going to penalize one or the other.

What would happen if googlebot visited the old address and saw nothing? Would it lookup the domain name again? Aren't I just prolonging the changeover process by leaving the site up there on the old server?

I don't think it should see it as a duplicate, since if i understand correctly you are still using the same domain name right?
