I am considering changing server due to the poor service provided by our current host. My main concern is losing the large number of Google entries we have built up over the years. Should I be concerned?

You should be okay. Once the DNS info resolves to your new host, Google will find it.
Try not to make the change during a deep crawl.

We had the same problem, very poor service, we made the change on Tuesday to a new host, by Wednesday afternoon everything was back to normal. Hopefully no effect on Google rankings.
