The best way to start is to not try to cloak at all initially, i.e. grab a script, or build one, and serve the same pages to the search engines and human visitors as a start. Once you get comfortable that the engines and regular surfers are getting the right pages, and your comfort level grows, then start to modify one page (either a human or a search engine page) at a time, gradually change pages until you cover all the engines you want to cloak for.
The initial consideration in whether you want to begin by modifying human pages or search engine pages depends on whether you already have good rankings. If you have good rankings for a particular engine, then you would want to continue to serve that engine the same pages it always got. In that case you may want to start by changing the pages regular visitors see rather than the search engine ones. If the reverse is true then start by gradually changing the search engine pages instead.
