website logs being written sporadically

I have a Windows 2003 dedicated server that stopped writting to the web logs correctly a few days back.

This is what happens, it writes to the logs for a few hours, then it stops. It stops at different hours on the different web sites hosted on the server. I cannot detect any pattern.

I know it is not a lack of traffic, because everything else is staying the same (number of leads, amount of revenue, etc.)

For example, if I visit several pages on one of the sites, and then view the logs for that site, my visits are not getting recorded.
If I do that on other sites on another server, my visit gets recorded right away.

I have the logs set to be created once daily.
The server uses Ensim web panel.

Any ideas.
By the way, I already reset the server a couple of times - did not help.
