looking for correct term

is a "managed" server what I'm looking for?

I'm looking for the most precise term for a hosting configuration. Seems that different hosts call the same thing in different ways and since I don't know the exact term I can't find a provider that offers it.

I'm looking for a dedicated server where I have root access, has automatic backups, a program to manage the server (plesk, cpanel, or something like that) and the people from the host don't mess with the server.

As far as I can tell this is not a "managed" but I don't know the correct term for it is.

Can anybody help? :)

"managed" implies the hosting company does mess with the server at some level. I dont know that there is a term that corresponds to unmanaged (its not the kind of thing one would want to advertise), you probably will find what your looking for in the least expensive dedicated servers

I've seen them simply called "dedicated" or "root" servers.

you just need standard "dedicated" service ...

depending on the specs it can be had for around 60$ and up ......

To concur, dedicated seems the thing you are looking for.
