What are major electronic mail protocols and where can I find out "free" information on them?

SMTP (Simple Mail Transfer Protocol), POP (Point Of Presence), IMAP (Internet Message Access Protocol), MIME (Multipurpose Internet Mail Extensions) and ACAP (Application Configuration Access Protocol) are the big ones - TCP/IP (Transmission Control Protocol and Internet Protocol) are also used for the transmission IIRC.
A Google search on these should yield some good resource sites.

POP is the Post Office Protocol.
The term is also used by ISPs to signify the presense of a modem pool for subscribers, hence Point Of Presense, but it is not related to mail.
