Lately, I have been seeing more and hostnames like 'yx-out-f136.google.com' and 'pr-out-f136.google.com' turn up on my site. What kind of acticity does this represent? Is it spidering? Is it human review?

i would guess spidering.
check your server access log file to see what the user agents and referrers are.

is the html entity for a zero width space.
since those characters are occurring at natural word breaks, i would guess someone is linking to you with a url that was set up for printing, since that character is often used for allowing line breaks within a string of characters.
