I have the choice of those 3 programs on my server and identifying spiders is the most important thing I am looking for. Does anyone use those programs to determine which spiders are visiting, frequency, and duration?

If by your "server" the reference implies paid hosting and access through cpanel?
All three are excellent when you are able to configure them for your personal use (not possible on paid hosting). It's best to download one of these and generate your own stats utilizing your visitor logs (offline).

awstats looks cute and is easy to understand and reports spiders reasonably well ..webalizer is IMO vague and inaccurate ..analog is worth downloading the data and ripping into better more informative shape ..
these 3 are not the only options you have ..any paid hosting should let you add your own ..or add in 3rd party stuff ..
at least one member here ( think xmas ) codes and makes one of the best packages there is to be found

Maybe a better question would be, "out of these 3, which can I customize to better suite my needs, which are...."
All 3 of these stats programs can be modified, depending on what your host will let you do. They all have home pages with additional info and forums that discuss modifications.
