At my new job, I am revisiting all of the web sites.

One of them MUST have the sub-domain name changed. (the sub in sub.domain.com)

I can leave the old name up for several months and create a new one also, whats the best methods to make the transition with as little impact as possible to search rankings?

Only if you recover the current inbound links and transfer them on the new domain.

Easy just 301 the old sub to the new sub. 5 seconds. Done.
