As a design company on almost all sites we build we place a link back to our site at the bottom of each page, saying something like: "Designed & Built by Company Name".
My question is how does having this link on everypage of every site we build affect both our and our clients SE Ranking?

It has potential to help your site and little potential to impact the clients site. Since the anchor text is not optimized and the font size would probably be very small it wouldn't be great for you.
