Title Format

I know that page titles are very important for search engine optimization.

How important is the format? Currently all my pages use the following format:

Site Name- Category- Page Title

Should I scrap this format and only use the page's title followed by a short description with keywords? What format will produce the best results?

I used to use Site Name - Page Title, but I definitely had better serps when I changed it to

Page Title - Site Name
