So I look in my referrer logs and I had received one access from someone who found my website by using an incredibly general (but nevertheless coveted) keyword. In fact, it would be the equivalent of the keyword 'Website' in my industry.
My site is young and as yet only PR3, weird/wierd.
Any ideas why this would happen? I couldn't find my site anywhere in the SERPS (Google) for the keyword, well, at least not within the first 20 pages or so..

Sometimes, I notice in competitive SERPs that my site gets a hit for a term that it is ranked, say 900th for.
I think these are automated rank checking programs that are crawling the SERPs, not real live people.

Maybe because of people who don't find what they are looking for within the first 2-3 pages, and then instantly jump to page number 15, 20 and so on..

Have you looked at the exact referrer URL? In most cases this clears everything up.
