I have a site that has very strong links (Over 10k in yahoo) and a few hundred pages with many in the top 5. I am happy with the traffic I am getting now.
What would happen if I just stopped adding pages and linking? Would my ranking have a negative effect? Could I expect a *steady* flow of traffic from all the work Ive done or would the search engines say "Hey! This guy isn't updating anymore and start bumping me down the list?"

Not unless you are in an extremely competitive space and working with throwaway domains.

I would expect a steady flow of traffic. Of course your statistics will reflect the change in activity on the site as things will probably flatten out a little. But, in most cases, it will continue to grow.
I would never recommend stopping completely. Adding a bit of new content here and there along with "upgrades" along the way is always suggested for continued upwards growth.
