One of the benefits of having these ratings and opinions was the SEO benefit (although we do think that users will benefit from seeing them).
Does this method mean that the serps will never see the text that the function is displaying?
Should I try to get them to allow me to parse the results and display as regular text?
Also: when we implement, will having 2,000 new pages (the "see more reviews" pages) on our site be harmful for seo? Should I try to find a way to launch only 100 a day for 20 days, or something like that?

chamco - If I'm understanding you correctly, this is the way to go. The engines will not see text that's written or called by javascript.
On the other hand, this may well by why the external site is supplying text this way. They may not want dupe content.
I would say overall that since they are supplying the text and it's not unique to your site, it will be of dubious SEO value to you anyway. You should probably substantially rewrite the text or create your own.
