I have read that server side includes that post the date are a good option for keeping freshness to a page but does anyone know if it really works?
What are the engines looking for, fresh content, new pages?

If you want freshness remember what google wants and try not to cheat. What I am saying is that Google is looking for freshness for its users, your customers and that means imho that you should create new content rather than try to cheat with SSI.

So using SSI's is considered cheating? Do the search engines look down upon this?

Using SSI is not cheating in fact I think its benefits are enormous but you asked whether simply adding the date or changing it through SSI can help with Freshbot listings.
The question here is do you feel that the content is fresh? If so do it.
