I have read that heavy interlinking between sites on the same ip can get you a penalty.
I plan to be cautious, and only install relevant links gradually after a while. By relevant I mean 'enhancing the content' :)

Same IP or not, that's a good idea. Excessive crosslinking can end up being penalized even when the sites aren't on the same IP -- and conversely linking sites that share an IP isn't necessarily a problem or a risk.
Also do you think Google would assign a lower PR to the virtual hosted domains?
Absolutely not. PageRank is a measure of links. Barring a site-specific penalty, sharing an IP has no effect on PageRank.
