I am helping a friend update their phpmyadmin as controlscan is telling him to upgrade to the latest and greatest because of hacker vulnerability. Do I save the config.php file, delete the phpmyadmin folder, download and upload the files from all-languages.zip, upload the backed-up config.php....then verify all coding is still good to go?

I am reviewing the options on web page [phpmyadmin.net...]

How do you know which one to choose. His site is only in english. Also, what is the alpha download?

I would back up the whole directory just in case.
I would not download the alpha. Alpha essentially means a new development. You've heard of beta testing? Alpha is before beta...
I would also only download the english version.
After uploading the new version, I'd look at the two config files to make sure there weren't any structural differences and if so, edit the new one to supply the connect parameters from the old one.
There also may be an install script for you to type the parameters in from a form.
