mail() sanitizing - can't seem to hack unsanitized form

I'm trying to learn how to make a secure email form so I've been trying to pass some strings in my form to produce what I've been reading about on php security website, but for some reason I can't get it to work. Could it be something with the server - some security program. I'm on a shared host so I don't know what they have going on.
