I know that our pantone colours are:
Blue 300
Green 376
When I'm using Illustrator and open the CMYK Pantone Colour Matching file (uncoated) the two colours look much darker than usual.
Is this normal? when these colours are sent to the printers, will they come out normal?
The same thing happens when I open our company illustrator documents (RGB format) and convert to CMYK.
Any help is most aprecheated!

Sounds to me that your monitor may be not calibrated to view the images correctly. Not to mention some Pantone are hard if not impossible to duplicate on a monitor.
Basically when you send something to print using a Panton color then the Panton color is what you should get. Just make sure you tell the printer what your colors are.
