I have completely redesigned my website to improve my conversion rate (i.e. visitors to orders). If I upload it now, can I accidently get bumped of the search engines? My site is PR6 and ranked #6 for my category keyword so I really do not want to take any unnecessary chances.

Upload it now. Why wait if you're convinced the conversion rate will be better? If the new site is properly optimized, you shouldn't have to worry about losing any rank at all.

It's not as if you are going to all of a sudden lose your inbounds. Are you using the same URLs for your important pages? I would. Assuming the important subpages attract inbounds, it would be important to keep using those locations.
I would definitely go ahead and update pages. You might even get freshbot in there to get the most up to date pages in the next dance - it's been known to happen.
