Now let's say this month, my server is running a little slower than usual, and Google stops crawling the site before it's got all 1000 pages (Not because they were inaccessible... Just because Google gave up)
My question is... would Google drop those uncrawled pages from the index? Or would it just use the snapshots from the previous month?
I think basically I'm asking... does Google only drop a page if it can't reach it?
They may come back later to see if your server is quicker and see if they can index the rest of the pages, they have been deepcrawling some sites for the last 2 days, and are still not finished, so give it a while.

I asked a Google rep what would happen if a site was down for a day during the deepcrawl. Would Googlebot come back?
He asked what Pagerank? I said 6, he said no problem, the site should be revisited. (that was last september during a pubconference)
