I created a new website selling the ever popular widgets with just temporary home and sub pages early in January.

Two of our pr4 & 5 sites had link to the new site. After the update I was 'chuffed' to see that the site was indexed but the early temporary pages had been used and were in the cache.

We are on page #48 for the main keyword.

Now I notice that, although we're still on page #48, the new version of the site is now in cache.

My question is: Will the fact that the new version of the new site is in cache be reflected in better search result position before the next update?

The cached version that you see will likely flux in and out until the next deepcrawl and update. You might notice a freshtag for your site at the moment, with the fresh cache. The fresh results tend to last for 2 or 3 days after the freshbot saw them then they disappear. If you get freshie dropping by every day then you'll keep seeing the latest cache. The serp position reflects the current cache, so it will flux too.

At least, I think that's how it works, and I hope that made sense too.

Yep, i see the fresh tag and the new cache. I'll just sit and wait and see if the SERPS improve.
