In short:
6 months ago our url was submitted by our webmaster to Google with a meaningless site title and some hidden text on the first page. Google indexed the site on the title of the first page (intro_puzzle). Google ranked us 1st on the Google intro_puzzle page (also the only one) ;)
We are events and conference organizers and have nothing to do with puzzles, so we figured that in order to be found something had to be done.
We changed the title of the site and visualised the hidden text. We submitted the url again.
After the October Google update, to be precise on November 3rd, we ranked quite high on the pages that concern us. Google had indexed us on the new title. And we were happy sooo happy. But ..... only for one day. Since November 4th Google has indexed back to the old site title page (which doesn't even exist anymore).
What is happening? Is something wrong with our site?

You're seeing the new title sometimes because the Freshbot is picking it up on the daily(ish) crawl. Don't worry about it, wait a few days your new title *should* be in for good.
I don't think submitting again will make any difference at all, once you're in you're in, so submitting again will have no effect IMHO
