One of my customer's sites used to be in Google, but it was not in the last update, however it was crawled at the begginning of the month, so does that mean it will be back this month?

More than likely it will be in again.
The obvious reason for dropping out is the server being down at the time of spidering.

So if it was penalised and banned they wouldnt bother spidering it again then right?

I could not be sure of that.
It takes a lot for a site to get banned, as you put it. More likely to get a PR0.
I'd really put it down to my suggestion in the first instance.
Check your server logs, did it spider the previous time and can you see if the site was down through obvious gaps in the traffic?
