Is there a limit to how many pages from one site google will index?
Im thinking of optimising about 800 pages? Do you think this is a problem with google?

I would not worry about 800 pages
MIT, for example has more than 900.000 pages indexed [google.com]
Getting many pages indexed seems to have to do with straight links and high Pagerank throughout your site. Check this thread:

is it considered keyword stuffing if each of the pages (800!) is targeted at one particular key phrase as below?
so if I was selling books one page may have... "second hand books" and another may have "second hand book seller" as their titles and also dotted around in the main text body, along with some appropriate images and accompanying text.
with some other keyword linktext at the base of the page linking to other pages.
I've seen other sites doing this so assume this is ok?

Putting 800 links on one page just for the Googlebot to find them would suggest that the 800 pages have little to do with each other. Normally pages within a site link towards each other naturally because they are theme or subject related.
