If you have 10 links on your homepage, and you move 9 of them to a sub-page (leaving just one on the home page), will this cause the 9 pages to be 'not found' in the SERPs until the site is re-spidered?

Dont' worry, nothing like this will happen. Once Google has identified a page and it's indexed then you don't need to worry whether you put its link on home or not. However the performance of internal pages might get affacted.
