The webalyser stats indicate that GoogleBot visited the site recently ... Now is there anyway to see all the pages accessed by them? Is it safe to assume that if a page has been accessed by them, it'll be indexed?

If a log stats package doesn't tell you what you want to know you have to check the raw log files.
If Googlebot has read your pages, they'll normally be indexed, but that may take anything from a few days for an established site to several weeks if Sandbox effects apply - see other threads.
