Plural forms of my kw's ranked much lower than singular

I sell widget cases and boxes and have many different styles, so it is natural that I would target the plurel form of the word. I have noticed that the plurel forms of those two words get ranked anywhere from 60 - 300 for my site, before Florida, I was in the top 5. I am starting to come back to life with the sigular versions ranked in the top 10 for about 6 kw phrases. I have also noticed that If I'm not in the top ten serps for that kw is not stable, I may be at #30 one minute and #160 a few minutes later. The thing is, I don't use the sigular form on my page. I know this is a form of stemming, but why exclude me for using proper form?

I also cannot figure out how the guy at #1 got to that position. He has a one page site, products on page and then transfers to a different url to place the order. As far as I can tell, no cloaking, but many hidden kw's. A PR of 6 even though alltheweb.com only shows crappy directory links to him, most have no PR. I have a PR of 5, many of the same directory links, hidden keywords as a test only, and I rank 60+ for the same kw's.
