I just changed the link architecture of my website. How long does it take for google to come and re-do the calculation to rank my different webapges ?

There's no way to even guess without knowing more about your site. Depending on the size and strength of the site, and the complexity of the original structure, it could take a couple of weeks or as long as a couple of months. If you've installed 301 redirects, your strongest pages should probably start performing reasonably well within a week or two. From there, it all depends on the factors I mentioned above.
There's not much you can do to speed things up except install the 301 redirects and keep a close eye on how the search engines are reacting to your changes so that you can fix any problems. If your site needs to be restructured, then whatever short-term issues arise are worth the wait. Good luck!

Depending on how you did it, I would guess within a week.

A site I re-did 6 weeks ago is just starting to rank again however I feel this is a Google problem these days. For my sites it seems to be very slow at updating changes, new pages and even completely new sites.
Methinks they're overwhelmed with all the constant changes and adjustments they keep making.
Unfortunately there is nothing you can do but sit back and wait.

@ HuskyPup
Was your site Pandalized? Maybe it takes longer for victims of Panda since they have to wait for a Panda update?

I have absolutely no idea of the PR for any site, it has never concerned me.
Nope, not pandalised, usually when I have moved an entire site to a new domain name with identical urls it's usually done and dusted within 2 weeks but recently I have noticed a massive slowing down of crawling and new pages being listed.
I don't know if that's a "holiday" thing however the last couple of months have been noticeably different...for me.
