I was thinking if Google can know if users are subscribing to a newsletter from a site and how many of them.

I know it can detect phone numbers, address from a web page.

p.s. what do you think, newsletter feature is deprecated or still working these days in the same time with RSS, Facebook, Twitter updates?

I can't see how they could - there's really no way to see all the opt-ins and opt-outs on your list. If they wanted, they might be able to project a rough estimate by counting how many emails you send to gmail addresses.

Am I missing an angle?

If Google bought data logs from ISPs and looked for confirmation/thank you pages they theoretically could figure out some stuff. I think that is going too far down tin foil hat area.

I think it is more likely that Google is paying attention to general direct traffic & email referrals as a signal.

I cant speak for other niches, but in my case the newsletter is by far the most effective way to reach my clients... (be it sales, showing them new stuff or getting a response of some kind)

They (Google) does own Feedburner, so they know your feed count.

Sorry for late reply. I've just got a job as SEO manager in another city :P

I am thinking Google recognize addresses, contact forms and why not newsletter option available.

It can track user activity on site after click on a result. So Google could count if user has subscribed. Can be used as a sign of quality site (related to Panda).

I am thinking Google can track user activity based on clicks. User click on a search result and Google use cookies stored in user's browser to see what is doing on that site.

I have read that Adwords knows if a user who clicked on Adsense knows if user has bought the item on landing site (2-3 pages away from page linked in ads).

Is just a thought of mine, i do not understand technically if is possible, other opinions about this are appreciated.

If Google maintains a tool/ware that can monitor if users are subscribing to a newsletter from a site they can surely do that. I am also definite Google can detect phone numbers and address from a web page if you have submitted your website to Google directory.
