I dont get it, why dont google delete old pages when they dont exist anymore, they keep the cach for month maybe a year, it just dont look good when you make a site: search or when you maybe not offer that service anymore.

I believe it does but then you can have other sites still linking to your old pages, so the spiders in general see them and try to access them again.
Check your server logs and see where the accesses to the old pages are coming from.
