Did a site:example search on Google Images just now and several of the thumbnails on each page were gone, replaced with just a tiny bit of blue border.

No, I've never seen that unless the page hasn't finished loading.
Assuming your page is fully loaded into the browser, what do you think might be going on? Are images removed from one data-set but their reference is still in another -- so they get called for an impression on the results page but there's nothing available to display?
