Category pg: "Mr X widget supplies ¦ widget category name"
Product pg: "Mr X widget supplies ¦ widget category name ¦ widget product name"
This matches the URL organisation.
I have had suggestions that making the titles more readable may work better, that the "¦" is breaking the phrases, eg use:
Product pg: "Mr X widget supplies widget product name for widget category name"
Some have also suggested reversing the order, eg:
Product pg: "Widget product name ¦ widget category name ¦ Mr X widget supplies"
so the primary phrase for each page is first. This seems to go against having the information logically organised though.
One other thing - should I generally initial-cap main words in titles or leave lower case? (except for first letter of first word and any names)

IMHO this is the way I do it however to be really focussed it should not be necessary to even include "widget category name ¦ Mr X widget supplies" IF your "Widget product name" is at least 5 or 6 words long.
Don't forget that your on-page H1 should also be the same or very similar as your title bar.
I know many do not agree with about this however I also complete the description and keywords tags with the same phrase or in the description synonyms for the product and these should also be repeated on-page.

I never put the website domain or business name in the title. You already have that in your URL. Put stuff in title that gets you to rank and gets people to click on your site.
