How can I get Goog to list my actual title and description? They like to substitute but I think I like the one in my tags better.

In general Google will substitute more often if your title or description does not contain the search terms. Substitute titles and description snippets often come from the ODP (DMOZ) - and you can add a NOODP meta tag [webmasterworld.com] to stop that.
Otherwise, watch your server logs and your WebmasterTools to see which common searches your page is showing for and make sure your title/description accommodate those keywords.
