How would one prevent the indexing of eBay pages? Would throwing in a noindex meta tag somewhere in the description work (even though it was not in the head tags, where it should be?)

It's worth a try, I guess. Google does try to accomodate non-standard code.
Have you tried asking on ebay's forums and searching their help files?
