I get a drastically different number when searching "link:domain.com" versus "links:domain.com" on my website. I'm wondering which is accurate that represents the # of sites linking to mine...

links:domain is not a special operator. So in that case you are only search on that particular character string - nothing more.
The special operator is link: and there should not be a space between the operator and the domain name - or esle you're back to just getting search results for the character string again.
