Hello All,

I am new to Sitemaps and really hoping someone can answer this question.

I have a site that adds postings daily. about a hundred postings each day. The url pattern is example.com/postings/1, example.com/postings/2, example.com/postings/3, etc. So tomorrow there will be 100 more pages on the site. Does that mean that I should submit the most up-to-date sitemap daily? Alternatively, is there a way to wildcard things as in example.com/postings/* ?

You can submit a new sitemap up to once per hour - so I'd say you should submit one every day that you add new urls.

No, there's no such thing as wildcard support with a sitemap. Each url needs to be fully qualified, including the protocol and the traling slash. Googlebot would end up involved in a resource-wasteful guessing game if some kind of wildcards were the approach.
