In my website I use ascii code like ü to replace strange characters. How does Google see ascii like the one I use? Does it mess up the words?

I haven't seen any indexing or ranking problems - but occasionally you do see the entity in fully spelled out manner in the title or description snippet of the search results.

So I'd avoid using character entities anywhere except in the textual content. In other words, not in title elements, meta tags, alt attributes and the like.
