So, I have a website on a technology niche.
It is a relatively new site with barely 6 months.
The website is totally in English and is hosted in Florida.

Nothing, absolutely nothing is local on this site. It is just global news and articles on an IT niche.
Now, get this, if I search the main term in Google Mexico and click on "Show only pages from Mexico" and my website appears on No. 3!
But, how on earth does Google relate this website to Mexico?
There's no word "Mexico" at anyplace on the website. If any, there are mentions to some cities on California, USA.
The only Mexican about my site, is my physical address on the registrar records.
What do you think about this?

Sounds like that's what is going on in your case. Google uses lots of cues for geo-location. I'd suggest giving them lots of other cues, including a Webmaster Tools account targeting choice [webmasterworld.com].

Maybe you're using Adsense and Google knows your location.
