Absolute confusion about Google search rankings

I've done more reading this morning about this subject than I probably should have, and I need to ask a couple of questions that maybe you guys can help me with.

I created 5 new sites a few weeks ago. 3 of them are now in Google's index, and all of these domains are search topics. For instance frogheadwax.com (NOT one of the actual domains, but you get the picture).

For 3 days this week, one of my new sites was ranked 16 in the Google results for my search term. Today it's 752. No changes at all made by me. Is this normal?

Also, the other two sites don't even show up in the results for their search terms. That confuses me. If you launched frogheadwax.com and it made it into the index, shouldn't the site at least show up in the results if someone searched for 'frog head wax', even if it's in last position?

EDIT: Another question (maybe too much for one topic) is how to I go about finding out if I've 'over-optimised' my pages? I've read loads lately about what I should do to optimise, but how much is too much, or do we really know?

You need to read up on "aging delay" and "sandbox" - changes in listing for new sites are not a problem, though that doesn't mean you don't have 'other' problems!

Make sure all new sites have a link or two from existing, stable sites (eg Quality directories), and avoid rebuilding until things settle down - adding new is fine, but restructuring may set you back to Square One.

Overoptimization is major cause of sick site syndrome, and is to be avoided; read up here on that too, and for Google, read their guidelines with special emphasis on linking issues.

Get that right, and Google is generally pretty fair.
