Each of my product pages displayed the relevant category description until I removed the duplicated descriptions a little while ago. It does look like Google had taken notice of the duplicate text.
Now that the category descriptions have been removed from the product pages and only remain on the category pages, do I need to do anything to get Google to reconsider my pages?

Not usually - googlebot just keeps spidering away.
