Our server crashed at the end of February and we were offline for 2 1/2 days. Evidently, google tried to crawl when we were down and my rankings have suffered once we got back up.

Many of our pages are now back where we were before the incident. However, a good number of pages are now marked as supplemental results. I have read that the supplemental results simply mean they are not as important to google as "regular" results.

Will these previously high ranking pages get back to where they were? Is it just a matter of timee? Is there anything I can do?

Thanks for your help

Its a matter of time. Double check and make sure the pages url did not change when you brought your server back up. Otherwise you might find yourself with a lot of duplicated content.
