Avoiding duplicate status when transitioning domains

I'm in the middle of transitioning my store from one domain to another. I plan to keep both sites online and provide links from the old site to the new site. I don't want my original domain to lose its rankings with Google through duplicate content troubles so I'm going to remove the description text from every product and category on the new site.

I'll eventually 301 redirect each of my original domain's pages to the corresponding pages with the new domain, and at that point I'll move the description text over as well.

Should this description text discrepancy be enough to avoid duplicate content troubles with Google?
