I recently did some changes to my meta tags - title tags, description & onpage content, etc.

I notice that the search engine listings are still using the old meta tags & onpage content in the snippet, however clicking on the cache shows that the new content & meta was cached.

Why does it not show up in search results then?
Anyone else notice this before?

Yes, I have also seen this kind of disconnect. In some cases the new text appears a bit later. In other cases, Google may be using ODP titles -- in which case you can use the noodp meta tag.

Apparently caching a new version of a page and changing the SERP are not one seamless piece. But given the size of the web, I'm not surprised that the process must be broken into steps.

The snippet and the cache are disconnected, often updating hours apart.

Sometimes, a datacentre may "freeze" one or the other for days at a time, leading to anomolies where the cache and snippet data are very different with one or the other not actually matching the search terms used.
