saving email to database

is there a way to save an email to a database to each specific field?

like if a user send an email :

Name : Nameof Person
Gender : Male
Skill : typing, reading, eating, walking, running, jumping, sleeping
Age : 24
Address : #5 Somewhere over there
---------------

then each specific info will be saved on its appropriate field?
